Trofie pasta with pumpkin and shrimps

Ingredients

  • 400 g trofie homemade pasta
  • 500g fresh shrimp
  • 250g pumpkin
  • 50 ml extra virgin olive oil
  • 1 bunch of parsley
  • clove of garlic
  • chili pepper
  • j.e. salt and pepper

Directions

Remove the skin from the pumpkin and grate it coarsely

Wash, peel and remove the string from the shrimps, but leave a dozen whole for the decoration of the dish

Boil the water for the pasta, then, in a large pan, fry the minced garlic, the chilli and a pinch of pepper

Add a handful of chopped parsley, put the shrimp in the pan and cook for 2 minutes, skipping them often

Remove the shrimp from the pan and put the pumpkin, lightly salt and cook for 5 minutes

As soon as the water boils, drop the trofie and add salt to the water

Put the shrimps in the pumpkin, sauté a couple of times and add a ladle of cooking water and mix with a spoon

Drain the trofie al dente, keep the cooking water, if necessary it should be used and put it in the pan with pumpkin and shrimps

Sauté the pasta a couple of times so that it tastes well, then turn off and serve.
Decorate the dish with some whole shrimp and chopped parsley
